Allergy Free FILL YOU UP DINNER!


ALLERGY FREE PROTEIN FILLED
SWEET POTATO N’ CANNELLINI BEANS PATTY!

Makes 12 Small Patties/ 7 Big Guns

What you need: Cannellini beans, mashed sweet potatoes, spicy mustard, EVOO, Coconut Oil, Cajun Seasoning/Seasoning you enjoy, GF Flour

ü 2 cans Cannellini white beans, drained
ü 2 cups mashed sweet potatos (I buy mine already mashed in the freezer section of Trader Joe’s,
    follow the directions to heat up)
ü 2 TBSP spicy mustard
ü 1 TBSP EVOO/Coconut Oil
ü 2 TSP Cajun/whatever seasoning you want
ü ¼ cup GF Flour

Use COCONUT OIL for pan.

DIRECTIONS: In a large bowl, mash drained beans and mashed sweet potatoes together.  *HINT* I mashed my beans in my magic bullet before combining. Then add everything else. You should be able to form a messy patty. Put patties into pan and let it cook for a couple minutes on both sides. When done cooking, put them on a paper towel/napkin/wax paper.

These are damn good over a bed of arugula!  If they need to be heated up I just pop ‘em in the microwave for a minute.  Feel free to put on a GF bun with avocado/cheese/whatever you fancy!  They stay fresh to death for about 4/5 days!
