Vegan Deliciousness!

Trader Joe's Guacamole Kit:
(Makes 4 Servings)

-2 Avocados
-1 Jalapeno Pepper
-3 Garlic Cloves
-1 Small Onion
-1 Tomato
-1/4 Cup of Lime Juice

Cut, peel & dice the ingredients, stir it up, add some salt and soak in the beauty of 185 Calories per serving.

Think it was $4....

You'll also need something to dip in the guac and if you aren't afraid of chips, then I highly suggest buying some Pita Chips with sea salt (vegan) from T.J.'s for $2.

8 chips is 100 calories.

So be sure to enjoy in moderation,
like everything in life.

You've got a snack for 2-3 days for $6, or $2 per day.

Mouth Watering...

I eat one of these at least once a day. It's a salmon salad and takes at the most, 10 minutes.
I do not cook. I do not bake. I don't appreciate all the time it takes to cut up veggies, fruits, or anything else for that matter. I make healthy meals that are quick, cheap and easy!

I call this....salad of love and daily nutrients for under $5 and in the comfort of my cozy apartment.

What's in it?

*About 1/3 avocado
*Cup of spinach
*1 salmon patty from Trader Joe's. 4 of them were maybe $5. Enough for 4 days...
*Spicy Mustard (use as much or as little as you want)
*1/2 cup of mixed veggie's, already cut up from T.J.'s
*some peppercini's


So I cut up the avocado in lightening speed, mix it with the spinach, put some mustard on top. In a pan, spray some calorie free olive oil, toss in the salmon patty, mixed veggies and drizzle some chili pepper sauce over all of it in the pan. Leave it in there for maybe 5 minutes, mix it around, take it off the stove and toss it on top of the spinach and avocado. Put some more spicy mustard on it, fill up my water cup and sit in my comfy chair!

Seriously. Easy.


Reading Into Yoga.


I'm obsessed with hot yoga.

In the 90 degree yoga studio 3 to 6 x's a week, I am loving every minute.

One month has passed, since I started the Yoga Alliance Certification Course at Queen Anne Haute Yoga. I am sitting up straighter, putting on my socks while standing and sliding my jeans right up....except for one, slight problem. Since I've been doing squat and lunge-like poses, my butt is stronger and it seems to....um.... have bubbled. I guess that's how I'm looking at it, because for once in my life, my jeans slide right over my thighs, but have a hard time making it over my booty. I'm not sure how I feel about this one, except for that it's better to have a basketball booty than a pancake.

Other than the growing glutes, I feel more stable in my emotional thinking. It's easier to let things go and move on to thoughts that actually matter. Like, the universal thought of, "What the hell am I doing here?" I am reading, "Yoga & the Quest for the True Self, by Stephen Cope." I highly recommend this book to anyone going through a questioning chapter of life. Cope talks about how a big change can unleash a deep, hidden feeling within. A promotion, a baby, a marriage, a move, dietary changes, any big event can bring these feelings to the surface.

The problem does not lie within the discovering of this new self, but what to do next. I found that for me, I am a 'Wanderer.' Cope says that, "the Wanderer intentionally sets out to confront the unknown, taking a journey that marks the beginning of life lived at a new level. During their travels Wanderers find a treasure that symbolically represents the gift of their true selves. And to find this gift, the Wanderer will suffer a deep reorganization of life."

I don't agree with suffering into this chaotic life, I like to look at it as jumping into a tornado, unsure of where it's going to spit you out.
