so I invited my Pa to join me and this is what
we...um...a-hem...ate.

 VEGAN and GLUTEN FREE*
   roasted red peppers, hummus, marinated great northern beans, red onion, niçoise olives and organic baby spinach on a vegan or buckwheat crêpe
If I saw this picture, I'd be like, "What the hell is that?"Had I given myself some time to take a picture of the inside of this magical food item, you'd see something different.
Long story short: MAGNIFICENT!

Anita's is a small specialty restaurant that focuses on personal service warm environment and creative menu items. Our theme is Crepes and French cuisine but we are not restricted to just that, we love to come up with creative drinks and food that focus on local and organic and made from scratch ingredients. Anita began selling crepes at Farmers Markets around town in 2004 and then opened Anita's Crepes Restaurant in between Ballard and Fremont on Leary in October of 2008.

SPICED ROASTED VEGGIES!

Spiced Roasted Vegetables

Ø Carrots
Ø Broccoli
Ø Cauliflower
Ø Celery
Ø 2 TBSP vegan whipped butter (Earth Balance)
Ø Salt & Pepper
Ø Mrs. Dash Salt-free Cajun seasoning
Ø Salt-free seasonings of your liking
Ø Olive Oil Spray for pan

Spray the pan, wash & cut up the veggies, melt the butter in the microwave 45 seconds.  Add the seasoning to the butter.  Drizzle on top of cut up veggies in pan.  Put in oven @ 400 degrees for 35 minutes and VOILA!

Folks, we’ve got a winner!  Adjust the seasonings and vegetables to your desire & share the taste of splendor!

Nutrition Facts:
2 TBSP vegan butter 160 Calories
Less than 250 Calories if not less for whole thing!
*Eat them quick, they do not last long out of the oven!

5 Ways to knock out YOUR Anxiety!

I am no doctor, therapist or life guru, but I do know a thing or two about stress.
5 things that helped reduce my own stress & anxiety.
1.
Eliminate/reduce ALCOHOL.
More water.
2.
No caffeine, unless it's green tea or caffeine made from green tea extract.
I'm obsessed with Vanilla Rooibos tea.

Here's how to make a Vanilla Rooibos Tea Latte:
  • 3/4 Cup Almond/Soy/Hemp/Rice Milk
  • 1/2 Cup Water
  • 1 vanilla rooibos tea bag
  • 1 TSP Vanilla extract
  • Dash of Stevia
  • Dash of Cinnamon
Join Milk & Tea Bag and heat up for 1:30 in Microwave
Boil hot water and pour in hot tea & milk mug.
Add vanilla extract, stevia & cinnamon.
Think it's around 65 Calories if not less.
Starbucks version is more than double the calories & sugar.

3.
WALKING, YOGA (hot/normal), HIKING, DANCING!
Anything to get the blood flowing!
Raise those serotonin levels!
4.
Meditation (even 5 minutes is enough)
Free AND easy guided meditations are online.
5.
Legs up the wall.
So easy. So calming. So worth it!
5-10 minutes is all you need, but some do it for 10-15 mins.

VEGAN Blueberry PANCAKE!

  • 1/2 cup blueberries
  • 1/3 cup flour (Bob’s gluten-free)
  • 2 T rolled oats
  • 1/2 tsp cinnamon
  • 2/3 tsp baking powder
  • 1/8 tsp salt
  • 1/2 tsp pure vanilla extract
  • 1 packet stevia
  • 1/4 cup almond milk
  • I topped it with agave nectar and 2 tsp of vegan chocolate chips....delicious dinner after a restorative yoga class.  Me gusta mucho!
  • Serves 1.

Funny THing

Right when you start making plans, life happens.  I am always searching.  Searching for the next best place to eat a vegan meal.  Searching for a happy and hot-weathered destination.  Searching for the yummiest and healthiest way to make a dairy free chocolate chip cookie.  Searching for what I'm supposed to be doing in this life.
I put these insane deadlines and pressure on myself and for what!?  So I can finally feel like I'm contributing enough to society?  Am I making my parents/self/friends proud yet?  Have I found my passion?
A wise man told me recently to slow down.
So that's exactly what I'm going to do.

*Lemon juice squeezed on top with dashes of cinnamon.
